Beef Carcass – In this self-directed provincial program, members study beef quality and grading, learning about marbling, yield grade, carcass value, and how management impacts meat quality.
The member must be registered in another 4-H project to participate in the Provincial Carcass Program.
There are separate fees due to the province. All guidelines and requirements are laid out by 4-H Alberta.
Weigh-in is October/early November.
The Achievement Day for this project happens at the butcher shop when the butcher inspects the carcass.
Sheep Carcass – In this self-directed provincial program, youth learn about meat science by evaluating carcass quality, yield, muscling, and fat cover to understand how live animals translate into consumer products.
The member must be registered in another 4-H project to participate in the Provincial Carcass Program.

Provided the dates align, you may use your market lamb as your sheep carcass project as well.
