The Alberta 4-H Provincial Carcass Project is a province-wide carcass steer competition. Members select and feed a beef animal to the finished weight, as they would a live market beef project, however the animal isn't judged live, it is judged on the rail. This provides the members with an additional learning opportunity. The goal of this competition is to find the carcass that provides the highest quality beef for a restaurant. Crestomere 4-H Multi Club has 7 members competing in the project this year which runs from November to June. Members will deliver their animals to predetermined abattoirs around Alberta the first week of June and the animals will be judged on their carcass traits. Maximum points are awarded for AAA 725 lb carcasses, 5-7mm back fat and moderate steak size. Members regroup in July for a learning and awards ceremony at Olds College.
